Ingredients

  • 1 package instant ramen (any flavor)
  • 1 egg
  • 1/2 cup mixed vegetables (bok choy, mushrooms, carrots)
  • 1 green onion, sliced
  • 1 teaspoon soy sauce
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon chili flakes (optional)
  • 1/4 teaspoon grated ginger (optional)
  • 1 small clove garlic, minced (optional)

Instructions

  1. Prepare broth: Cook ramen according to package instructions, but use only half of the seasoning packet to reduce sodium.
  2. Add flavor: Stir in soy sauce, sesame oil, and optional ginger and garlic to the broth.
  3. Cook vegetables: Add vegetables to the boiling broth 1 minute before noodles are done.
  4. Add egg: In the last 30 seconds of cooking, crack the egg directly into the broth and gently stir to create egg ribbons.
  5. Serve: Pour into a bowl and top with green onions and chili flakes if desired.
